My mom (yes, the 95 year old) has spent this entire summer in Miami visiting her big brother (98).
She just got back this week and brought me a fabulous gift sent by my sweet cousin, Yllien:
That's right. Giant, Cuban, Bakery-made crackers. We call them galletas. (Or in this case they should be called galletonas, but that's not important right now.)
Inspired by their size, I made empanadas over at Babalú today. Not just any empanadas… Giant, Cuban, Home-made Empanadas. or "La Empanada Que Se Le Perdio a Santa Barbara."

Oh, I just LOVE and MISS those! Yummmm.
We make “Empanada Gallega” in my house (when the weather gets cooler though) fill them with ropa vieja that has chorizo minced in or picadillo with chorizo, or even a shredded chicken fricasse or other cooked meat dishes or seafood stuff seasoned heavely with spanish paprika and onions, etc. There’s a Galician blog that shows this process quiet well maybe you’d like to attempt it sometime 🙂http://www.lacocinadelechuza.com/search/label/Empanadas%20y%20empanadillas

those galletas are huge!speaking of oversized cuban food….my mom just bought my daughter last night the biggest chicharrones del viento i have ever seen…it’s like elephant ears almost! gotta send you the brand…they were awesome!
