Arroz con pollo is my ultimate comfort food. Mi Mami made it every year for my birthday and again at Christmas and Easter. The funniest thing happened after Donna and I were married for about 2 years and mom and dad came to visit for my birthday. On that day she revealed her recipe! And my Tennesee born wife has been making it ever since, loyal to my mom’s recipe! We use it as a recipe to impress. It’s a great Cuban recipe to make for guests or if you have to feed a crowd.Es la verdad, todo de los Cubanos tienen un Cuco y una Beba en la familia!
