I have to admit that when I was a child I didn't ever get peanut butter and jelly sandwiches in my lunch.
And even though I usually got some kind of Cuban-food-of-awesomeness-leftover in my Barbie lunchbox, I confess that I was jealous of my little American counterparts who found those crustless sweet and salty offerings in their brown bags day after day.
As I got older, I didn't give peanut butter and jelly much thought, until I had a peanut butter and guava jelly sandwich. (ohyesIdid.)
It was a beautiful melding of the two cultures that have made me the person that I am today.

One of the reasons why I loved Summer camp when I was a little girl was because of the Peanut Butter and Grape Jelly sandwiches they gave us on Fridays!!! The crust was cut off and the sandwich cut in four. Oh I loved those little sandwiches!!!! My mom did not make it for us. We had the pan cubano with jamon and mayonesa, or instead of jamon, croquetas, but never the “American” salty and sweet spread. Every once in a while I’ll fix myself a P&J sandwich and reminisce my younger days in Summer camp. :-)Enjoy Las Vegas!!!!

Do I still have them? Every now and then… but with Rasberry or Boysenberry Perserves. Yum!
As far as I am concerned, Peanutbutter is best when smothered on Granny-Smith Apples or Bananas.

As a newly arrived Cuban refugee child in the 60s,one of the food items we would get from El Refugio was a giant can of peanut butter. We really did not like peanut butter but it was an excellent source of protein so we might have it on bread, but I really dont remember if we got jelly with it. Needless to say, I was not a great fan. It wasnt until much later and had a picky eater daughter that I discovered how deliciously simple a PB and J sandwich could be. I am also a great fan of peanut butter and chocolate shakes.

Marta I love, love your blog.. As a little girl, I never had peanut butter sandwiches like the American kids in my class. My lunch was usually un sanwish de jamon con queso. I remember being in 3rd grade and begged my mom to make me a PB sandwich, she had no idea what it was so I explained what the sandwich consisted of and she made me one. It was horrible, I didn’t like it. First of all, the bread was all torned up because my mom, like all good Cuban mothers stored EVERYTHING including peanut butter in the refrigerator and secondly, she didn’t add jelly so imagine how appealing – dry, torned up bread with small chunks of PB…not a good experience. It wasn’t until I was a teenager that I rediscovered PB and to this day is one of my favorite things to eat. I eat it by the spoonful and if it’s a sandiwch, I love to pour some honey on top of the PB; que rico!Have a great time in Vegas.

At our home we prefer extra-creamy Jif Peanut Butter.- Peanut Butter sandwiches for school lunches were mainly prepared with peanut butter and grape jelly. However, we also enjoyed peanut butter and a sliced ripe banana sandwich.
– These days our family likes Jif peanut butter with Nutella sandwiches!
– I make homemade ice cream for our dog, Chloe with peanut butter, plain yogurt, bananas and honey.

We didn’t have much peanut butter around because my sister is deathly allergic, so whenever I’d go to my girlfriend’s house, I’d have a peanut butter and grape jelly sandwich on white bread…heaven! Fast forward 20 years and wouldn’t you know it, my son also has a peanut allergy. He’s off to college now, so I can sneak a PB&J every now and then!

I LOVE peanut butter!!! As I don’t like any kind of lunch-meat, I was lucky enough to have many, many PB&J sandwiches in my school lunch bag. I still take a PB&J sandwich to work with me at least once a week. I’ve never tried it with guava jelly, but definitely now. I can’t say what my favourite combo is but one of the top ways is rye bread toasted with peanut butter and honey. My favorite way to enjoy Jif peanut butter is to spread it on my wheat bread [oh such a slice of heaven it is]. Peanut butter, yes. Jelly, no. Hmmm do I make something creative with peanut butter [I’m shy], I know it would sound weird but I normally spread some peanut butter on my Oreo.

My fave way to enjoy jif is on a graham cracker. We always had peanut butter in our hourse growing up but my dad was the only one who ate it, or shall i say spooned it straight from the jar! I always add a it to mole. I wish my kids would eat sandwiches! I’m glad my kids like my cooking 🙂

WE LOOOVE Peanut butter — you can’t beat a classic pbj, you cant go wrong with ants on a log or peanut butter and apples or peanut butter and bananas.I grew up with PBJ, but not all the time because they would get soggy before I could eat my lunch.
At our house we love peanut butter milk shakes too.

Not only did we get PB&J (my mother the rebel gave us strawberry jam) for lunch, we even took them in wax paper bags. Wow, am I dating myself or what? Anyway, since I enjoy classics I still treat myself to these sandwiches, though when feeling a little wild I go w/Crunchy PB.;-D

Hi Marta,My favorite way to use peanut butter is to make Thai Peanut noodle. Basically you use creamy peanut butter and mix it with garlic, soy sauce, vegetable or chicen broth, lime juice and red pepper flakes. It makes a yummy sauce that you add to linguini and veggies.

I like PB&J with grape jelly on fresh white sliced bread.As a little girl from Cuba we received a can of PB from “El Refugio” in Miami. I was not very fond of PB. I never got PB&J for lunch, just a big fat ham sandwich, which I didn’t like then and now I brag about it every time a lunch story comes up. My mother packed that ham sandwich and it was at least 3″ thick, it was huge…
I make great peanut butter MILK SHAKES, they are awesome!

Being from Europe, peanut butter was never part of my lunch box goodies :(when I moved to the US a few years ago I came across two quintessential American things, that just were not compatible with the European palate – root beer and peanut butter!
over time I got used to peanut butter, and today I LOVE it!!!
I prefer a warm toasted bread with peanut butter and honey … yuuumyyyy!!!

Unfortunately, my grandbaby is allergic to peanut butter so I have to sneak it at other people’s houses:( My fave way is straight from the jar on a spoon:)I had NO idea that Peanut Butter was supposed to be put into a sandwich. It occurs to me that in early exilio Miami, we really didn’t have American kids in our Catholic school (or at least not in my grade; I just went to go look at my grade school pics and sure enough, I didn’t have an American kid in my class till I got to 4th grade and changed to a school that was NOT in “la sauesera” so I just didn’t ever see this phenomenom). We used to get the refugio cans of peanut butter and it was pretty much mine, all mine. I would keep a spoon in there and just take bites throughout the day:)
My grandma used to make an amazing peanut butter pie, ice cream, and shake…I miss my grandma!

So…We only eat Jiff in our household! I never ate Peanut Butter and Jelly sandwiches at school. And I really don’t like the two together. (I hear the moans!) But I love Jiff Peanut Butter. I usually have it on toast or in a sandwich all by itself! And I have to have a diet coke along with it! My husband eats it right out of the jar with a spoon! (which I have been known to do!) But here is a cute story….when my little grandson comes over he immediately goes to the cupboard and opens the door. The then proceeds to find the Jiff peanut butter and struggle to bring it to me. (he’s 1 1/2 so the big peanut butter (especially if it is new and full) is a little heavy for him to manage). He brings it to me and asks “pease” which means please. He wants his own spoon of peanut butter to eat! Before he could talk he would do this and when I took the jar he would do a sign language for “more” wanting some! It is one of the things I really look forward to when he comes over! I hope he never out grows it! Anyway…great post! I hope I win…but…win or loose, I will be eating Jiff Peanut Butter!

I have a love affair with peanut butter, although I didn’t eat a peanut butter and jelly sandwich until I went to college (my mom never bought the stuff, and would send me to school with either vienna sausages, ham sandwiches, or croqueta sandwiches…).I have my first taste of a PB&J sandwich in college and I hated it. Not because of the peanut butter, because of the jelly. So now… I enjoy my peanut butter sandwiches, crunchy, creamy, honey roasted, it doesn’t matter. Peanut butter? Yes, please!
I love to make innovate things in the kitchen and have used peanut butter to make thai food (yummy!), as well as tried old recipes (Muddy Buddies, anyone?) that I’ve adapted over time.
How can you have a contest like this about peanut butter? It’s the most delicious thing on the planet! Well, aside from pastelitos de guayaba. 🙂

Hi There,I did get peanut butter as a kid but was never a fan of grape jelly, I always begged for the pricey strawberry preserves. I always had Gourmet tastes I suppose. One of my favorite ways to enjoy Jif is the chunky peanut butter on an Mac or Granny Smith apple or on celery with raisins. AKA ants on a log. I have to try it with the Guava Jelly my mouth is watering thinking about it.Hmm, Maybe some Pastelitos de Guayaba with some peanut butter inside! I love, love, Chocolate peanut butter ice cream too.

We always ate peanut butter and jelly sandwiches in school. My mother knew we loved it.Here’s a great recipe for peanut butter balls,2 cups peanut butter… 2-4 table spoons honey to taste……..powdered milk mixed in till a stiff dough forms. Roll into balls about 1 inch diameter.place on wax paper on trey in freezer.In bowl melt chocolate bark candy coating 14th lb* in microwave 10 seconds at a time till creamy and melted or use double boiler.Take off heat let cool a little (5 min) roll balls in it and place back on wax paper and put back in freezer. till shell is solid. YUM!!!!!

Sometimes we do a variation on the cuban cracker + guava paste + creme cheese after-dinner staple and substitute creamy peanut butter for the cream cheese. Try it, it’s awesome!

My favorite way to eat peanut butter is with sliced apples! Yummy! I never had peanut butter and jelly sandwiches for lunch or anytime. Growing up I was not lucky enough to have many American dishes. My mother only cooked Cuban food and we rarely ate out. As an adult, I could never acquire the test for them either. I mostly use peanut butter these days to make Asian peanut sauce to dip Satay.

Great blog Marta!My secret recipes…Power packed energizing protein snacks: Peanut butter as spread for apple slices. PB with pretzels .PB and 1/2 banana, PB on celery with a sprinkle of rasins. PB/cream cheese (1/2 &1/2) splenda as fruit dip. PB creamed with chocolate chips and ricotta cheese (1/2 & 1/2) with sprinkle of instant coffee.

I never got peanut butter and jelly as a kid, i know i know, rough days! But I just made a batch of chocolate peanut butter haystacks last night – so good – one bag of fiber one, one bag of choc chips and a cup of lowfat peanut butter. melt chips and pb in microwave, stir in cereal, drop by spoonfulls onto a wax paper covered cookie sheet, put in fridge until chocolate hardens. a little TOO good. 🙂

We only made it with Jiff brand crunchy peanut butter it was a layer of blonde fudge with a huge layer of unadulterated Jiff crunchy another layer of blonde fudge and then on the top I would stripe it with peanut butter and chocolate. This is a fun contest you are having. I will share a favorite recipe of mine.Peanut butter recipe: homemade granola bars.
1.5 cups rolled oats
1.5 cups fiber cereal (something like all-bran)
1/2 cups vanilla soy protein powder
1/2 cups wheat germ
1/4 cups flax seeds, ground
1/2 cups dates, chopped
1/2 cups dried cranberries
1/2 cups slivered almonds
1/4 cups molasses
4 tbsp honey
1/3 cups Jif Natural Peanut Butter Spread
Mix the oats, cereal, protein powder, wheat germ, flax, dates, cranberries, almonds. Put the molasses, honey, and peanut butter in a glass measuring cup, warm it in a bowl of hot water to soften. Mix the warmed wet stuff into the dry stuff, maybe with your hands. Dump the mixture into a shallow pan and press down. Refrigerate for about an hour to harden, then cut into 18 bars. Put bars into individual ziplock bags, store in the freezer. Around 160 calories each.

I grew up eating peanut butter, lettuce, and mayonnaise. I know that sounds gross, but if you grow up eating it, it just seems normal. The crunch of the iceburg with the peanut butter is even better than PB on celery, and the mayo adds a little tang. I still like em. Hope I didn’t gross anyone out!

1 cup Jif PB
1 cup sugar (you can sub splenda as well)
1 egg
1 tsp vanilla
Mix all ingredients and bake @ 350 for 10-12 minutes

Years ago when I was in elementary school, our teacher shared this snack with us. Lightly toasted bread, spread with Jif peanut butter and then add sliced red apples and you have a Jif and apple sandwich. To this day, this is one of my favorites.

My kids like to put PB and mini chocolate chips on one slice of bread and on the other slice put large marshmallows cut in half. We broil both sides of the bread in the oven on low and come out with a toasted marshmallow half and a roasted peanut butter and chocolate half. Put them together and you have a delightful s’mores sandwich.

In school lunches we were lucky enough to get peanut butter and jelly. yayy. But now my father makes my children his specialty. He calls it the “Choco Nutter Butter Fluffer Sandwich” It is Nutella, peanut butter, and marshmallow fluff. We do a peanut butter – banana- tortilla wrap. Heat tortilla in microwave for 10 seconds. Spread with peanut butter, then drizzle with chocolate syrup or heated Nutella. Place peeled, whole banana on top of peanut butter, on the far side of the tortilla, then roll it up. Cut in half, and eat the heck out of it.Thank you 🙂

Awesome giveaway!We used to make a healthy peanut butter candy when I was a child and I just recently got the recipe from my mom. Besides peanut butter (we used crunchy), it had honey, powdered milk and sometimes wheat germ and/or coconut in it and we would just press it flat on a plate, refrigerate and cut into squares. It never lasted long. We also used to eat peanut butter and jelly on graham crackers when we had a babysitter.

My peanut butter creation is something my mom use to make us when we were younger. We didn’t have alot of money so for a treat mama would make us peanut butter that was mixed with the dark Karo Syrup. She would mix this up and then make us a sandwich. Every time I make this now I think of her and when I was younger.

I love a PBJ & PC…that’s a peanut butter & (homemade) jelly with potato chips in the middle…extra CRUNCH!! Then there’s peanut butter on a banana or apple slices, YUM. We weren’t lucky enough to get peanut butter and jelly for school. :(We actually use an apple for a peanut butter sandwich instead of bread. Slice an apple in half, cut the core out. Then spread Jif peanut butter on the center of the apple then cover with the other half of apple. You can put raisins, chocolate chips or granola on top of the peanut butter if so desired. This is one of my daughters favorite snacks!!

I have a great recipe I’ll share. Thanks for the giveaway too!I make my own strawberry jam every year when the strawberries are just right (I even drive the 30 miles to the Strawberry Festival to get the best berries). I don’t make many biscuits or put a spoonful into my yogurt, I go to all of this trouble just to enhance my JIF peanut butter sandwiches. My 3 year old daughter loves when I use cookie cutters to make them into different shapes. I know it isn’t TERRIBLY creative, but I work really hard to make sure that I am eating the very very best pb&j I possibly can! And I make around 3 dozen jars every year, because we eat these sandwiches every day and never get tired of them!

My husband and I love to sandwich JIF peanut butter between cinnamon graham crackers. I keep some made up at all times. My husband likes to eat them with his coffee in the morning and also snacks on them in the middle of the night with a glass of milk. I could eat them until I get sick….. but then again, I love JIF peanut butter so much I could just eat it straight out of the jar (literally until I get sick). LOVE, LOVE, LOVE JIF PEANUT BUTTER!!!!!

Add Jif peanut butter to on side and top with bananas!
I know pb & b (peanut butter and banana) is well known, but the addition of mayo takes it to a whole new level.

Peanut Butter Bars. . . . 1 small jar of Jif peanut butter – 2 cubes melted margarine – 2 cups of crushed graham crackers – 4 cups of powdered sugar (mix together and push into bottom of 9 x 13 pan. Melt a 12 oz pkg of milk chocolate chocolate chips and spread on top. Put in fridge and let set up for 15-20 minutes. Remove from fridge and score before chocolate is completely set.

my son and I love to put Peanut Butter and bananas on ritz crackers. Another healthy alternative that my son and I love is peanut butter and celery stalks on ritz crackers or keebler club crackers since they don’t have all the salt on them. We love the to go cups of Jiff. I can just drop them in the small travel goody bag with some crackers and a banana and my son is set for a road trip!

I know this may sound odd, and I wish I was that younger age that could submit the recipe, but one of my favorite every sandwiches was peanut butter, onion and lettuce. Strange, I know, and you might cringe, but I remember eating it at my grandparents’ house when I was 10 years old, and I absolutely loved it! 1 cup Karo
bring to a slow boil (can even do in microwave!!)
add 1 cup Jif creamy pb, stir till smooth
pour over 6 cups Special K cereal, stir and press onto cookie sheet
top with 1 1/2 bags butterscotch chips and 1 bag semi sweet chocolate (melted)
cool in fridge, cut and eat!!!!

1-3/4 cups all-purpose flour
1/3 cup sugar
2-1/2 tsp. baking powder

I am a 63 year old woman who still enjoys her peanut butter and jelly sandwich, like you, my mother never gave me peanut butter for lunch, but when I had my own children I bought my first jar of Jif. I now buy the low fat which still taste the same and I use any jelly, but my favorite still grape. My grandchildren have learned about peanut butter from me too. I buy 2 jars at a time now. Chocolate Carnutty Bars are our favoriteNonstick cooking spray
1 8-oz pkg. reduced fat reduced fat cream cheese
1 pkg. 2-layer size white cake mix
1 cup quick-rolled oats
1 12 ¼ jar caramel ice-cream topping
½ cup of JIF peanut butter
1 egg
1 11 ½ -oz pkg. milk chocolate pieces
1 Tbsp. Milk
1 cup cocktail peanuts
Preheat oven to 350 F. Coat a 13x9x2-inch pan with nonstick cooking spray. Set aside. For crumb mixture, in a large mixing bowl combine cake mix and oats. Using a pastry blender cut in peanut butter until mixture resemble fine crumbs. Beat egg with milk; add to crumb mixture, stirring until well mixed. Reserve ¾ cup of the mixture. Press remaining mixture into bottom of the prepared pan.
For filling, beat cream cheese with a mixer until smooth. Add caramel topping and beat until mixed. Spread on top of crumb mixture. Sprinkle chocolate pieces on top, and then add the peanuts to cover. Sprinkle evenly with reserved crumb mixture. Bake 30 minutes. Let cool completely on a wire rack. Cut into 24 bars. Store covered, in the refrigerator or eat straight away! Makes 24 bars.

We love peanut butter everything! After trying in vain to get my little son to eat some sort of sandwich, I finally tried peanut butter and jam. This being England, “jelly” is what they would call Jell-o here, so we have had to rewire our brains NOT to say “peanut butter and jelly” as we get really strange looks from the natives! In fact, finding peanut butter–decent, American quality peanut butter, is a real challenge. Sadly, no Jif! (Dare I say I grew upon a Skippy household, which at some point went all-natural/no sugar PB?) I loved PB and banana growing up, and always kept PB and apples in my dorm room in college: bread might go stale or moldy, but apples kept pretty well and were a perfect crunchy sweet foil for PB. My 5 year old loves to have a blop of PB to dip his apple slices in, and takes a PBJ to school for almost every packed lunch (some days he gets the school lunch, and can then sit next to his friend with a peanut allergy). Another fave for him is PBJ with Nutella. Not that he gets that too often!

My all time favorite recipe is peanut butter pie, tast just like a reese’s cup! And it’ssuper easy.Take a graham cracker pie shell and pour chocolate ice cream topping on the bottom. Next, mix together half a container of cool whip and peanut butter, now add this to the pie shell. Add the remaining cool whip on top and refrigerate for 1 1/2 hrs. Serve and eat.

My family’s favorite way to have JIF is in French Toast – first you spread JIF on 2 slices of bread, then sprinkle with mini chocolat chips, put the bread together to make a sandwich, dip in milk and eqq mixture and fry… This is awesome. I also add it to Brownies and sometimes even yellow cake mix!!

My boys love a toasted peanut butter sandwich with creamy Jif peanut butter. The second the toaster pops up the break my husband announces, “PRECIOUS TIME” and he rushes to the toaster. He feels that the peanut butter has to be put on when the bread is piping hot so that it melts the peanut butter. Since his accident in June he hasn’t been able to walk, so I’m the one who rushes my 32 week pregnant self to ensure “PRECIOUS TIME” is met. ha ha ha My 2 1/2 year old ends up with a face covered in peanut butter, but he loves every bite!

Love love Jif on a spoon, bare. Why mess with perfection?And – school lunch was Jif on white bread (yes) with grandma’s homemade grape jelly. I can shut my eyes and almost taste it, 43 years later!
Now I use Jif to make the best homemade peanut butter cups coated in chocolate, in mini-cupcake holders. The kids can’t get enough!

I was so lucky as a child to have peanut butter and grape jelly. I think they only had grape jelly when I was a kid. Mom always left the crust on!Today, a spoon dipped into the jar is just the right amount of protein for a quick snack, to keep my blood sugars level.

My Grandmother has always used Jif peanut butter for her famous Potato Candy. Jif Peanut Butter is our families only choice. Here is the recipe:Potato Candy
1 lg. potato, cooked & peeledConfectioners’ sugarPeanut butter
Mash potato with sugar, may take 1 pound or more. Mix until stiff. Sprinkle confectioners’ sugar on board. Roll out like dough. Spread with peanut butter. Roll up like jelly roll. Cut in slices.

i LOVE A Fried PB&J take two slices of white bread and put peanut butter on one side of both pieces. then put jelly on one piece and place the two together then spread butter on both outside pieces of bread. place the sandwich in the frying pan and brown both sides then get it out pour a large glass of milk and eat up! I love making “apple smiles” with my kids – take apple slices, peanut butter, and marshmallows. Spread the peanut butter on an apple slice, line up mini marshmallows on top, spread peanut butter on another apple slice, and place that on top. The red of the apples look like the lips, and the marshmallows are the teeth…so cute!!!

Growing up, my mom ONLY bought JIF —ever…so I have so many things that I love JIF with, but just last night I was passing the tradition on to my little girl (that peanut butter goes with everything) by teaching her one of my classics:Icecream with JIF peanut butter and rice crispies….YUMMO! I know that it sounds like such an odd combo – but once you try it, you will understand why it is one of my favs. Of course, all my Christmas baking has wonderful recipes that I love with peanut butter – but the icecream is the one little snack that you just love to throw together. I love JIF peanut butter! Growing up, we were not allowed to eat sugar, which provided us the opportunity to come up with some healthier snack foods. A favorite for us was putting a twist on a classic – split a banana lengthwise, then slather both sides with Jif peanut butter. Place halves in a ziploc bag or wrap with plastic wrap and place in the FREEZER! In just a couple of hours you have a delicious sweet snack!

Thank you for the opportunity to win some nice things (both to you and to JIF)I have a daughter who have severe milk and egg allergies. As a mom with a kid with severe food allergies, our food bill went through the roof and that is when I found Southern Savers. I was relieved when I discovered I could still make her favorite peanut butter and fruit sandwich.
Take half a cup of strawberries, half a cup of blueberries, half a cup of blackberries normally would. Once your sandwich is together, I take the Pampered Chef sandwich sealer and complete the process by sealing our pb/fruit sandwich. I usually end up making about 6 to 8 sandwiches at once(one for each of my two girls and freezing the others in individual sandwich bags for lunch that week. It is lower in sugar, less expensive, delicious, and most of all a safe food for my daughter!

When I was a little girl, my dad, who is a peanut butter-aholic, used to make grilled peanut butter and jelly sandwiches for us. He’d butter the outside of the bread and then put a generous amount of PB and a little bit of jelly (usually apple jelly), and then he’d grill them on the stove top. As an adult I love to do this same thing, but now I use my sandwich press instead. It is still a favorite indulgence–that hot, ooey-gooey peanutbutter drips out of the bread and all over your fingers, forcing you to lick each one clean! Yummo!

I LOVE peanut butter everything! I ate many PB sandwiches when I was pregnant with my daughter (I had gestational diabetes) and she was born with a peanut allergy and can’t stand the smell. Peanut butter and banana sandwiches (on 100% whole wheat bread) are a staple now that I am diabetic. I just have to eat them when she’s not around.

Peanut butter is a staple in my house, I often joke that my kids are made out of peanut butter since I would eat it by the spoonful when I was pregnant. During the holidays I like to make my own mini peanut butter cups. I melt a bag of semi-sweet chips and a little parafin wax in a double-boiler, spoon about 1 teaspoon into the bottom of 25 mini paper cups, top that with 1 teaspoon of peanut butter, and then follow with another teaspoon of melted chocolate. Yummy!

Yes, we all love Peanut Butter and Banana….sooo yummy!! BUT I have a new one that is EVEN BETTER!!Swath your peanut butter all over one piece of bread and then take PINEAPPLE (yes pineapple) and put it on top of the peanut butter. Eat it just like that (open-faced) or top with another piece of bread.
A Couple of Tips:
1. I use canned pineapple slices since 1 slice pretty much takes up a full piece of bread. Cut up another slice to put inside the “hole”. Make sure you pat down the pineapple just a bit before adding just so it won’t drip all over you as you eat.
2. You can use pineapple tidbits or crushed pineapple, but it can end up being too damp with too much juice. But go at it if you so desire!!

I love peanut butter in any way shape or form, but I rarely make sandwiches of it. I’m late for the contest but that’s okay. I’ll go ahead and share my favorite thing that I make with PB anyway. It’s always a little different as I make it up as I go along, but here’s the basics.THAI COCONUT-BASIL-PEANUT CURRY
Chopped up chicken breast(s)
Cubed potatoes
Onions chopped up big n’chunky
Fresh basil (as much as you want)
Fresh garlic (” “)
Chunky peanut butter (okay, Jif) a bunch of it
A good curry powder or paste (I prefer red)to taste
2 cans coconut milk
1 can regular milk
Peas or carrots or whatever veggies you like
Sriracha hot sauce (to taste)
–sofrito up the chicken and garlic in peanut oil until chicken is cooked.
–add all the rest of the stuff as much or as little as you like and to taste.
–let it simmer until nice & cooked and somewhat thickened.
–serve over jasmine rice or thai noodles and garnish with crushed peanuts and fresh basil.

My grand daughter Lulu’s breakfast: 4 huge spoonfulls of peanutbutter “every day” and a cup of milk. My breakfast: (and the dogs too) bananas and Jif I make a sandwich on wheat bread and add some raisins . Health food all around!
