    Hello,Could you please enliten me. I had tasted the greatest CUBAN dessert in West Palm FL and Miami FL. It was cheescake on the bottom and flan on top. I wanted to know how to make it?
    And slo there was a small pastry like cookies, but not. Thy were filled with cheese. It was a sweet pastry. I would love to know how to make it.

    Last night I made the crock pot ropa vieja. Oh my goodness- everyone raved!! It was exactly right. And then I made flan/chocolate cake and it was even better than flan cake. YUM. I plan on working my way through more of your recipes soon!

    I have received a large container of crema de leche candy from a Cuban friend. I don’t eat candy but love dessert. I was wondering if there was any Cuban dessert or other recipe that this candy could be used for? My young friend says that Cubans eat this sweet candy as is.

    Picadillo is my favorite since I was a kid. My mom taught me how to make it, but there was no wine and no tomato-at all. I will try it with both. I lost my dad in March, shame I cannot share this recipe’ with him. I found your blog on his computer though. He too was Cuban.I love your blog so far, and I will try some of these recipes on my family. Do you make your rice with garlic, and a bit of olive oil, and salt? It is simple and perfection. 35 shakes of salt. 2-3 cloves of garlic crushed. enough EVOO to “swirl” with your finger on top of the water. Rinse rice until clear, then (I have a pot that came from Cuba so my measurement is by eye) fill with water until about 2 fingers above the rice. Mix in garlic, add EVOO and swirl so you get little pools, cover, heat to boil, then simmer on low low for 40 minutes…no peeking. Perfect white rice.

    I just wanna ask you whether there is a way to make “Dulce de Leche” using the milk we find in the market. Because I remember that in Cuba, we would use milk from cows that had just delivered their calf.

    I have been a fan of your blog for some time now. It’s a fixture on my bookmarks toolbar. I live in Kansas City and, until recently, certain ingredients like Spanish chorizo have been hard to find. I have made your boliche, picadillo and yesterday, your pulpeta. It was a little tricky browning the pulpeta on all sides, but I’m sure I will get better with practice! I’d never had pulpeta before, but it’s the best non-meatloaf “meatloaf” I’ve ever had. Thank you so much for sharing your wonderful recipes and stories.

    I was looking for Cuban recipes to help with a project for my Culinary class. Most of the recipes I have are from memory and what my Grandma has shown me.I really like this blog a lot. I live in a very small town and I have only met one other Cuban that is not in my family. So I very much enjoy internet because I come across sites like these and it makes me feel not so alone in the world well more like this town. I guess that is what I get for living in California. Like my Grandma always tell me “Cubans dont come this far west.” 🙂

    I also recently found your wonderful web site. I made the Ropa Vieja New Year’s Eve and Arroz con Pollo today. Both meals turned out scrumptious…just like Mom’s cooking. I am so glad I found your recipes as I’ve had a difficult time trying to duplicate my mother’s cooking. She has been cooking since she was nine years old and has never used measuring utensils. Next, I’m going to tackle the empanadas-yum!

    I seen this recipe- well partial recipe on tv and it looked so good, I’m hoping if I give you the ingredients from what i got you have this recipe to share: ok -(this is a layered recipe) its sweet plantains mashed,cooked ground beef that they put adobo and sofrito in, added greenolives on top of that, then they whisked some eggs, poured on top,then cheese i think chedder and then roasted red peppers arranged baked at 350 for 40 minutes, do you know this recipe please help me whats it called

    Marta,I cracked up when I read your “fufu” post. I totally relate to the “esplaining”. My Cuban American background always subjected me to 20 questions. I pretty much grew up in the San Francisco Bay Area. I got stuff like,”Díaz huh?, I didn´t realize you are Mexican? You don’t look Mexican”.
    And then my parents seem to be the only Cubans ever who immigrated (1952) which made a whole ‘nother song and dance. I have lots of family who refugeed but my parents came for other reasons. But the whole refugee/immigant thing really confuses people.
    Thanks for the great recipes.I’m making lechon in the crock pot and was surfing for cook times when I found you.

    Hola: I desperately need several authentin Cuban recipes to give South American chef for my daghter’s wedding. He is going to make a sample in advance. One of the entrees for the menu is lechon asado (or roast pork)con mojo criollo con muchas cebollas, frijoles negros con encima de arroz blanco y platanos fritos maduros.

    My mother and I tried making the Flan Cake today. After cooling for 15 minutes, we carefully inverted it onto a cake plate and the top portion of the flan broke and fell into the middle. It was still delicious but we are trying to figure out what we did wrong. Any ideas?

    Yo quisiera saber si usted podia conseguir la receta para Empanadillas Cubanas, el estilo Oriental, similares a las empanadas, llevan la carne en el centro, no mucha y el resto de la empanada es tostadito y crujiente, riquisimas.
    Tambien, si es posible quisiera la receta de el Pudin de Boniato estilo Oriental.

    I just love Cuban food. Was engaged to a guy from Cuba. His mom would cook all the time. I do miss it. I now live in AZ and we do not have Cuban restaurants here. I use to go to a bakery in Lennox California. They made a meat pie that had green olives in it. I can not find a recipe for it. I can not find a recipe any where. I was hoping you might help.

    I use to live in Miami and loved the Cubano bakeries, etc. I lved the croquiras, guava and cheese. I cannot think on the name of this but it was a round biscuit with a glazed top and hamburger meat inside. Help please!! And thank you.

    I love your site. I refer to it often, just to make sure I got the ingredients right. I’m Puerto Rican and with your help I was able to make my Cuban husband happy with the dishes he grew up with. Plus, dishes his mom never learned to make and she talks highly of my cooking. ;)<–wink face. Thanks a bunch for sharing.

    Marta I just came across your website and I love it. I’ve been in this country for 45 years and only in the last few years have i had the desire to cook Cuban food. My kids are half Italian but the love everything Cuban. Every time Abuela visits she makes a big batch of Frijoles Negros and my son freezes it to bring back to school with him. Anyway I can’t wait to try the Ropa Vieja recipe as well as the churros. Keep up the good work.Besos………….

    Thank you for your recipes! I’m american and my fiance is cuban and every time I have made something cuban he has always said.. its good but its not like my moms.. or its missing something. Ever since I’ve been using your recipes there have been times he has told me that its better than his moms!

    Do you have a recipe for the Mani Dulce (Peanut Candy) you can buy on the streets? It looks like caramel and is often rapped in paper because it’s very greasy.I just visited Cuba and fell in love with that kind of candy!

    All your meals look so delicious. My abuela use to always make rice pudding (Arroz con Leche) and at one point in time I had the recipe. She is going blind and can’t hear very well, so I couldn’t get the recipe again or figure out how to make it perfectly like her. Thank you so much for posting the recipe, everything sounds exactly the way she did it!!!Side note: Her rice pudding was the only one I would eat and eat and eat! All other versions could not compare!

    Today’s Cuba is not the Cuba that Cuban-Americans like Marta and me grew up in… the communist government has destroyed the culture, the cities, and even the food of what was once a beautiful, successful country with American technology and European culture. You won’t find food like this in what the government has turned into a third-world country. However, if you visit Miami you can find all these treats and more!!

    I love the book that you show in the internet.I ordered it and was a dissapointment, some of the recepies like Empanadas are not in the book…I,ll have a hard time to recomend it
