Cuban Tostones and Picadillo… With Milk?

What goes great with milk?

I posed this question to my Facebook followers the other day and the responses I received went something like this:

  • Cornbread crumbled in milk.
  • Mermelada de Guayaba con leche.
  • Cuban bread with butter.
  • Harina de maiz y azucar!
  • Oreo cookies.
  • Mother’s Taffy Cookies.
  • Croissant. 
  • Café!
  • Café La Llave con leche!
  • Café y pan Cubano!

These are very much like what I would have said, too. I would have also added the obvious. Cookies, for one. Specifically, chocolate chip. Or chocolate cake. While I’m thinking about it, pretty much anything involving chocolate is the obvious milk-pairing choice for me, but that’s not important right now.

But I was challenged to come up with something that was maybe a little more…unexpected.

Challenge accepted! 

I looked first, as I’m wont to do, to my repertoire of Cuban foods. What is a food that would go surprisingly well with a glass of milk? (You can find all my recipes here.)

Something savory. Crunchy. Maybe a little salty. I’ve got it! *she cries out and snaps her fingers*

Tostones!

Wait. I wanted more than just tostones. How about if I made, Tostones with Picadillo?Yes! 
 
The toston, for the uninitiated, is a crispy, fried plantain. A green plantain. You want to get them tender on the inside, but perfectly crunchy on the outside. And to this, there’s an art. You double-fry them. *takes bow*
And why Picadillo?
  1. Picadillo is in pretty heavy rotation around here. 
  2. IS THERE ANYTHING BETTER THAN TOSTONES WITH PICADILLO??
  3. The juxtaposition of the salty/crunchiness and the savory meat would wash down nicely with a glass of ice-cold milk. Am I right?

So, let me review. Today we’re going to be making Tostones, pairing them with Picadillo and adding an ice cold glass of milk. You’re welcome.

My friends over at Toma Leche® have made a series of videos challenging folks to try something unpredictable with milk. I like how they ask the question,

If you’re pairing your milk with savory foods, the emulsifiers in the milk attract themselves to the fat, dissolving them and allowing them to go down more easily. Because science.

Let’s do this.

HOW TO MAKE CUBAN TOSTONES RECIPE (FRIED GREEN PLANTAINS)

YOU WILL NEED:

  • 3 or 4 large, unripe (green) or barely ripe (barely yellow) plantains (NOTE – Try to find some that are not very curved.)

  • 2 cups olive oil (for frying)
  • Sea Salt
  • A bowl of warm salted water

DIRECTIONS

1) With a sharp small knife cut the ends from each plantain.

2) Cut a lengthwise slit through skin. 

3) Cut plantains into 1-inch-thick pieces.

4) Pry the skin from plantain pieces. 

5) In a 12-inch nonstick skillet heat 1/2-inch oil over medium heat until just hot enough that the plantain will sizzle when added. 

6) Fry plantains in small batches (DON’T CROWD THEM!) until tender and slightly golden, 2 to 3 minutes on each side. 

7) Use tongs to transfer the plantains to paper towels on plate.

8) Remove skillet from heat and reserve oil.

9) With the bottom of a heavy saucepan or a wide solid metal spatula flatten plantains to 1/4-inch thick (about 3 inches in diameter). I use a ‘tostonera’ for this. 

10) Dip the flattened plantains Into a bowl of warm salted water, one at a time, and drain them well on paper towels.

11) Heat reserved oil over moderate heat until hot but not smoking and fry flattened plantains in batches, without crowding, until golden, about 3 minutes.

12) With tongs transfer the fried tostones to paper towels to drain and season with sea salt if desired.

    I thank God every.single.day for your blog. My husband loves it and sadly, in Texas we don’t get to taste picadillo with tostones very often.

My family left Cuba in early 1961.My brother was My family left Cuba in early 1961.My brother was on the first Pedro Pan flight in December of 1960. Happily, my family was only separated for a few very tense months. But we were part of the lucky few who managed to leave the country rather quickly.Once reunited, my father vowed we’d never be separated again and so when my older sisters were to be married in California, he packed up the family and we never looked back.We lived in Miami for the first 3 years of our exile, before my parents moved us across the country, and so we made our lives in Southern California.As Cubans in California – “en el exilio del exilio” – we managed to find other Cuban families and connected with the familiar community of people who spoke our language and recognized our customs and our food.I’ve told the story of my family’s exile many times using whatever words the Lord sees fit to give my feeble brain.Tonight, I’m a white haired 70 year old grandmother (call me Wella😉) living in Southern California with the family my husband and I have created.My parents passed away years ago. (And I unabashedly miss them daily💔).What’s happening tonight (on the island that saw me born) is that the people have taken to the streets armed with nothing but pots and pans and have been banging them for 12 hours as of this writing, calling for “Libertad!”Who could believe we would actually see this day?
Who can sleep when freedom is so close you can taste it?Praying for the brave people of Cuba. May liberation come quickly! 🙏🏼🙏🏼🙏🏼Also, I’m shining up my own pots and pans. It’s almost time.
