If there is one thing I can never get enough of when I'm baking something, it's guava paste. (You were going to guess that too, weren't you?)

If you're not Cuban, you're probably not feeling it and that's O-KAY. I really don't get Jell-O, so we're probably even there. 😉
But I swear, I am constantly daydreaming about ways to get guava into my baked goods. (I also daydream about having a kitchen staff, but that's not important right now. =D)
So I made a fabulous bread pudding that you don't need to pour sauce on because:
1) I caramelized the dish first.
2) I added guava paste to it, which melted into all the nooks and crannies and made it all uber-gooey and rich and absolutely AMAZING.

Better than your regular run-of-the-mill bread pudding, and now with MORE GUAVA. 😉

I’m not Cuban (but then really I don’t fully know what I am, really, except American Indian…there was a whole lot of mixing it up in our family :o) So I am just simply American and I don’t get the jello thing, either. Or Peeps actually (sorry, Eric) Now Guava…YUM!!!

It seems the craving for pudin de pan is in the air, I made one yesterday, but it was the regular type with the syrup. I LOOOOVE dulce guayaba I will never understand how other’s don’t love it. Also jello yup jello sucks high five I agree… but I do recall loving these wierd jello’s my grandmother made that where in these big wierd molds with fruit cocktail mixed in, like fruits floating in jello ha ha.Oh and here’s a tip, the reason a bread pudding comes out dry is you don’t use enough milk to soak, if the bread is old soak it atleast 1-2 hours. ALSO very important is to not squeeze the bread when ripping it, and don’t press it hard after you add the milk, just gently incorporate everything by folding things in. Once the bread has soaked you can stir around and break it up really well but now strong squeezing and stuff.
Those tips work for me, it’s what my grandma taught me and my mother and we get a good, not dry, sweet pudin de pan with the nice syrup.
Also when my grandmother didn’t feel like making the syrup (which was ALWAYS) she would just use “Pancake Syrup” like Aunt Jemima.

I’ve never tasted a guava (or guava-flavored/inspired thing) that I didn’t like! Mmmmm. Perhaps I’ve got some cuban stored away in my geneaological nooks and crannies. But do tell – where does one find guava paste?

Bread pudding has always been a favorite in our family. This is going to be good…and, we have our granddaughter this weekend. She will love it!
I’ve made this pudin de pan with guyaba y pasas, but I use croissants. I dont break it up, I layer it and put guava and raisins. Then another layer of the bread, then top it with more guava and raisin and then bake. I also add rum to my liquid. It is a rave on Noche Buena. Try it sometime.
